New Standards for Oven-Baked Dips
(see Page 26).
An update to the Bread Twists Procedures Standard
Instead of including dimensions for each half dough ball, the updated procedure calls for squaring off the edges of each half dough ball and slightly flattening them (see Page 25).
An update to the Bread Twists Packaging Standard
Dipping cups are not required for Bread Twists that are ordered with Oven-Baked Dips (see Page 26).
08/03/2021 Updates
In continuing with Domino’s Pizza’s efforts to reduce some of the operational pain points in our stores there are a couple more changes that will help to reduce the amount of dishes in our stores.
Dominos is expecting these two changes to reduce our dirty pan dishes by a great deal and has given the green light to go ahead and make these changes immediately.
Bread side pans with mats can be re-used throughout the day but must be washed by end of day.
- Pans used to bake pan pizzas must be kept separated at the cut table
- Pans used to make pan pizzas must still be washed after each use.
Stuffed Cheesy Breads should now be baked on a screen instead of a pan.
- If you choose to prep these ahead of time they still need to be prepped and stored in an enclosed container with a lid…and dated! This can be in pans with lids or in a dough tray with another dough tray on top.
- The Standard for using a jalapeño or olive to identify the type of Stuffed Cheesy Bread has also been updated: the identifying ingredient should now be placed on top of the 50/50 cheese mix, and a small piece of spinach should be used for the Spinach and Feta variety instead of an olive.
Equipment and Smallwares
- The Standard now includes a reference to the list of approved equipment and smallwares in the E&S guide.
- New Standards have been added for the use and re-use of pans when making Handmade Pan pizzas and side items.
